Cotton Candy Marshmallow Recipe
Ingredients:
- 3 packets of unflavored gelatin
- ¾ cup water (divided into ½ cup + ¼ cup)
- 2 cups sugar
- ⅔ cup corn syrup
- 1–2 tbsp Amoretti® Natural Cotton Candy Artisan Flavor
- ¼ cup cornstarch
- ¼ powdered sugar
- Pink food color, optional
Instructions:
- In a stand mixer bowl, combine ½ cup of water with the gelatin. Let it sit to bloom while you prepare the syrup.
- In a saucepan over medium heat, combine the remaining ¼ cup of water, sugar, and corn syrup.
- Stir until the sugar dissolves, then stop stirring and allow the mixture to reach 240°F (soft-ball stage) using a candy thermometer.
- Carefully pour the hot syrup into the bloomed gelatin while mixing on low speed.
- Increase the speed to high and whip for 8–10 minutes, until the mixture is thick, glossy, and tripled in volume.
- Mix in 2 tablespoons of Amoretti® Natural Cotton Candy Artisan Flavor.
- If using food coloring, gently fold it in for a swirled effect.
- Pour the mixture into a greased or parchment-lined 9x9-inch pan.
- Let it set for at least 4-6 hours or overnight.
- Once set, dust with powdered sugar & cornstarch, cut into squares, and enjoy!
