  1. Bloom gelatin with 2 tbsp., of water.
  2. In a saucepan heat sugar and remaining water until sugar dissolves, not boiling.
  3. Strain sugar water into a bowl and stir in gelatin. Set aside to cool.
  4. Whip the cream to soft peaks.
  5. Mix Eggnog Compound into the gelatin mixture.
  6. Fold into the whipped cream carefully so as to not lose volume.
  7. Pipe or spoon into bowls and let chill for 1-2 hours.
  8. Garnish with nutmeg and enjoy!
