Ingredients

Crust
Pistachio Filling
Chocolate Ganache Topping
  • 1.5 cups semi-sweet chocolate chips
  • 1/3 cup heavy whipping cream

Directions

Crust
  1. Oil and line an 8x8 cake pan with parchment paper.
  2. Preheat oven to 350 F.
  3. In the bowl of a stand mixer cream together butter and sugar until light and fluffy.
  4. Add in flour in increments, scraping the sides of the bowl as needed.
  5. Press dough into prepared baking pan, dock the dough with a fork, and bake for 20 minutes or until the edges start to become golden brown. 
  6. Remove from oven and let cool.
Pistachio Filling 
  1. Mix together toasted knafeh and Pistachio Cream.
  2. Spread on top of shortbread crust.
Ganache Topping
  1. In a microwave-safe bowl heat chocolate and cream in 30-second increments until, stiring between heating.
  2. Once chocolate is melted and incorporated with cream pour on top of the pistachio layer.
  3. Refrigerate for 3-5 hours or until set.
  4. Slice and serve!
